Easy, Healthy, and Delicious Snack Recipes!

Plenty of companies have made it their life’s mission to get you to be a regular snacker. Whether it be Snapple, Chex Mix, or Oreos – they want you to make their product a part of your daily routine. The problem is that many snack foods aren’t great for your health. That’s why you should always have your own go-to snack recipes that you can make in a flash! Below are 3 easy, healthy, and delicious snack recipes to get you started.

Sweet Potato Bites

  • 3 sweet potatoes
  • 2 Tablespoons of olive oil
  • Your favorite seasonings! I chose salt, pepper, and cumin
  • Optional: ketchup or ranch
  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Dice up your sweet potatoes into small pieces.
  3. Add all your ingredients in a bowl and mix it together.
  4. Line a baking sheet with foil and toss your now seasoned sweet potatoes on the sheet.
  5. After forty minutes you can take them out of the oven and enjoy them with some ketchup or ranch!

Bruschetta 

  • 1/3 cup of olive oil
  • 3 tablespoons of balsamic vinegar
  • 2 tomatoes
  • Fresh basil
  • 3 cloves of garlic
  • Baguette
  1. Preheat oven to 350 degrees Fahrenheit.
  2. Dice the tomatoes, basil, and garlic.
  3. Put the tomatoes, basil, and garlic in a bowl with the balsamic vinegar and olive oil.
  4. Cut about ten pieces from the baguette.
  5. Placed the baguette pieces on a baking sheet lined with aluminum foil.
  6. Grab a spoon and add a spoonful of the mix in the bowl to each of the baguette slices.
  7. Place the sheet in the oven for 5 minutes, then enjoy!

Banana Pancakes 

  • 2 eggs
  • 4 bananas
  • 2 teaspoons of vanilla extract
  • 1 teaspoon of cinnamon
  • 1 tablespoon of butter
  • Optional: fruit, sugar, agave or syrup as a topping.
  1. Add the bananas in a bowl and mash with a fork or masher.
  2. Then, mix the mashed bananas with the eggs, vanilla extract, and cinnamon.
  3. Heat a pan to medium heat and coat it with butter.
  4. Add 1/3 cup of pancake mix to the pan.
  5. Flip the pancake when the edges start to brown, so about every 2-3 minutes.
  6. Add your choice of toppings!

Treat Yourself Queso

For the days when easy and delicious trumps healthy… 

  • 1/2 a cup of butter
  • 4 tablespoons of butter
  • 1 cup of heavy cream
  • 1/3 cup of regular milk, whether it be reduced or whole
  • 2 cups of cheddar or Colby Jack cheese
  • 4 cloves of garlic
  • Your favorite seasonings! I chose salt, pepper, and chili powder
  • Tortilla chips
  • Optional: tomatoes, jalapeño, and onion to add flavor
  1. Let butter melt in the pan.
  2. Add garlic and any other veggies for flavor (optional).
  3. When the butter melts, add flour and stir until it becomes a paste.
  4. Add milk and heavy cream to the pan, then stir until the paste disappears into the liquid.
  5. Then, add your favorite seasonings and cheese.
  6. Let the cheese melt and whisk every once in a while.
  7. If the queso is too thick add regular milk, if it is too thin add more cheese or flour.
  8. Your queso is ready when the cheese has melted and it resembles a sauce. Dig in!
